From the GVX article:

How is 6' 327 just a 3-star?
Don’t you get extra credit for a low center of gravity? As Hooper says, pushing on him is going to be tough for those 6’6" lineman. Might as well be pushing on a boat anchor…
I think Dooley is smart – going after the quality 3-stars that have not hit everyone’s radar screen. The rating services tend to bump kids stars after the top schools sign on or start following. Sometimes, the ratings services are out front, but I think they are late to the party or miss a lot.

I'm guessing it's the height.
It’s a lot easier to pass over a 6’-1" guy than a 6’-5" guy, especially if shorty doesn’t have much vertical (which, I’m guessing, is the case).
According to a rivals.com write-up,
his nickname is “tug boat”.
For the record, I used "boat anchor" before I read the tug boat article
I like the tug boat label – especially since they are used to properly position bigger ships.
And if we find a bigger ship than 316 lb tugboat….
